Transfer Hyper-V VM to New Host

I am trying to transfer an existing Hyper-V VM to a new host.  This is a production SQL server so it's up time is critical.  The entire VM is nearly 2 TB in size so I'm running in to some unpleasant prospects with regards to the amount of time necessary to move it.

My plan is this:

Make a full backup using VEEAM
As soon as backup completes, power down original VM and do a VEEAM Instant Recovery to new host.   Once that is complete the server I'll migrate the full machine to production in the background.  That process will take several hours but at least the VM (and consequently our websites) will be running during the process.

My question is:

Is there a better/faster way?  Will this even work? Do you have any other ideas?

I need the fastest transfer possible in order to minimize the down time for this machine.
