Have Outgrown SBS 2011 - Migration Procedures?

I have a client that will outgrow SBS2011 within a couple of months.  

Are there any guides or step-by-step directions to move file and mail services from SBS2011 to a Win2k8 Std/Exchange 2010 installation?

There is nothing special about doing it, and I haven't seen anything specifically for this scenario. It will just be a matter of installing the full products on the various servers and then moving services around in the usual way. Exchange is easy to migrate, as is the domain.

Why would I need to 2 servers - couldn't I just install Exchange onto the first new server?
Not best practise to have Exchange on a domain controller.
If you have outgrown SBS then you are at the numbers where Exchange should be installed on to a seperate server. The SBS server would have to be rebuilt/replaced as well, hence the need for two servers.
