SBS 2011 Install
I have a client that currently has a Windows 2003 R2 domain in place with Exchange 2003 server functioning. I am in the process of dissolving this network, and implementing SBS 2011 Standard. I actually have the SBS 2011 installed on the same subnet as the existing W2K3 domain. I can access the Internet from the SBS 2011 server, and I can actually transfer files between domains. Also, the SBS 2011 server was installed on its own separate domain. I am simply getting everything ready for the cut over that will start this Friday evening.
I do not want to disrupt the existing active W2K3 domain as far as accessing files, databases, and mail, but at the same time I want to get things going with SBS so that it cuts down on the work needed to be done this weekend. I believe it does have DHCP services running on it, but I can disable it since hosts and devices use static ips.
Can I safely run the Internet domain name and web server certificate wizards without screwing up communications on the active W2K3 network? I will be acquiring a Godaddy SSL certificate as well. I actually wanted to get exchange all setup on the SBS box with the receive connector disabled so that mail does not mysteriously flow to the new server.
Also, is it advisable upgrading the default 2003 domain and forest functional levels tp 2008? I saw an article that recommended doing so, but did not elaborate why.

Running the wizards shouldn't cause any problems if you have DHCP turned off. Do ensure that you have uPNP turned off on the router, that will stop that from changing.
The two domains will be completely ignorant of each other until you change things over.
However your second point about moving servers between domains - not going to happen with Exchange. As soon as you take the Exchange server out of the old domain it is dead. You cannot pick up Exchange from one forest and put it in another.

The existing exchange 2003 server will not be used at all after this weekend. I am sorry if I did not make that clear. Since this is a small network with 15 users, I will simply export their mailboxes to psts and import them into the new SBS exchange 2010 mail server. The SBS Server will be the sole server providing mail services once the transition completes, and the old (existing W2K3) servers will be scrubbed and reused for menial tasks to offload processing on the SBS 2011 server.

The existing W2K3 servers are all standard (a DC and exchange 2003 server).
In that case you have nothing to worry about other than the loss of permissions.

Let me ask, since the router is setup to forward smtp (25) to the Exchange 2003 server will that prevent a test message being sent from the SBS server? The router is not blocking any outbound connection either. The reason why I ask is because I tried sending a test email to one of other exchange accounts outside this offer and its sitting in the queue with 451 4.4.0 Primary target ip address responded with "421 4.2.1 Unable to connect.

Yes, you're right. Does this apply to installing a Godaddy SSL certificate as well? Probably so, but I thought I'd ask anyways.
Does what apply? You will not be able to install the certificate until the wizards have been run. You need to run the wizards, do the cert request, install the cert then enable it.
