Configuring Storage and Network on Hyper-V on Server 2012 hosting 2 guests

I have a 2012 Server I plan to use as a VM Host which will have 2 guest OS's (server 2008).  

The physical server has a RAID 1 local.  I plan to install the Server 2012 OS here.  I plan to create another Volume that attaches iSCSI to our SAN.  The 2 Virtual Machines will reside here.  Am I better off creating additional volumes inside the guest that attach to our SAN or create additional vhd files that reside on the previously create volume the guest OS's already reside on?

Also, the server has 4 NIC's.  I plan to dedicate 1 to the server itself and 1 to each guest.

Do I need to statically assign the NIC's IP addresses in Server 2012 or do I do that in the Guest Virtual Machines?  Or do I do that in both with different IP addresses?
