Sharepoint 2007 backups

Question on SQL backups.  I know just backing up the SQL databases is not enough to get me back to an exact replica of my Sharepoint environmet if I have a server(s) meltdown.  And neither is the native backup.  I don't have alot of money to buy a full featured product to grab the rest of the "stuff" sharepoint uses.

So I have a SQL server and App server, running in Sharepoint 2007.  The SQL server should be fine with the SQL backups.  What do I need to backup on the App server so that if I had to restore I can back to where I was.  I'm thinking of these thing in particular.  Do I even care about any of this? What about IIS?

Protection of Global Assembly Cache (GAC)       
Protection of Hive
Protection of front end Web Server configurations and customizations
Protection of any Service Applications and associated configurations
Protection of Fast Search configurations
