I am trying to compile what what user can and cannot do in a Citrix XenDesktop session compared to his normal physical workstation?

Well pretty much nothing is the answer.

High performance is possible with enough back end compute (CPU, RAM etc) and storage (FC, SSD, etc) resources.

As ever it all comes down to how much you're willing to invest in terms of money and time to construct the solution that matches the use case.
