How do I set up Outlook 2010 at home with a different outgoing email address

I need to send out an email but I don't want the person receiving it to know where it came from.  

How can I do this?

Don't do it.  You say that with such conviction.  Why?

What if I create a hotmail account but in the settings don't put in the proper settings for incoming email?
