windows XP/Office 2010 - Changing the organization name

I just added a digital signature so a file and an organization name popped up that no longer exists.  I went into advanced properties and didn't see it there.  I went into OPTIONS and didn't see it there either.
How can I change the organization name field?  Where?

"The solutions and answers provided on Experts Exchange have been extremely helpful to me over the last few years. I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.

If the details you want to change are in Office 2010 then you can edit them in the registry by changing the value at:

HKEY_USERS/S-1-5-21-3197979478-2423948066-2867584237-1000/Software/Microsoft/Office/Common/UserInfo
