Is it possible to force employees to use a specific employee signature at the bottom of each email.

Exchange 2007 does have some limited support for forcing email signatures through transport rules. Depending on how detailed you wanted to get you may be able to use this.

If your signatures and rules are going to be more complicated you might want to take a look at a product like policy patrol. With this software it is very easy to create signatures that pull info from AD, contain logos, etc.

I'm curious does the support get better with new version of Exchange?

We are currently running exchange 2010 and they did make improvements to the native signature abilities in exchange. I do not know if 2013 improved any further.
If you want to have something really pro and give you much more you may use http://www.codetwo.com/

Since 3 years we are using its great and reliable software. Many companies using it instead of Exchange's own untalented signature feature.

They have support and compatible versions for all Exchange versions including Exchange 2013.
