Installing Exchange updates - stopdagservermaintenance

New to Exchange and wondering how to install updates. I have 2 mailbox servers in my DAG. Do I HAVE to run the stopdag and startdag powershell scripts, or can I just install updates and reboot? I'm planning to install updates off hours, so having all email online is not critical. Will the mailbox servers and the DAG just come back "online" after I reboot??

Thanks for the quick reply. The updates are NOT Exchange 2010 updates, just Windows 2008 updates. I had an outside firm do the Exchange updates, they just didn't install any Windows updates for me unfortunately.

So since these are just Win 2008 updates and I'm doing the reboot off-hours do I still have to put each DAG member into maintenance mode??
