Exchange 2010 Mail Store Backup

I have about 12 mail store databases. Can I back them up seperatly into their own folders & can I just back up their folders on the server or do I have to backup anything else with each database? Also do I need to dismount the databases before I start backup?

Yes, you can if you have more space in drive better you can take backup in tape drive.

2. can I just back up their folders on the server

Yes. you can. but it would not helpful to restore the mailbox or mailbox items.

3.do I have to backup anything else with each database

normally not required apart from mailbox database store, if you want you can take backup systems state, it may helpful to disaster scenario

4. do I need to dismount the databases before I start backup?

No, don't required to dismount the database while taking backup

So to be able to restore a specific mail store, I would choose the database folder and C drive and set VSS Full Backup?

Also, would the full volume backup be preferable (in the video he says by volume, not by folder) and if I did do full volume backup could I restore only specific mail stores in the case that only 1 or 2 are corrupt?
