SBS in 2012 Windows server


I noticed that in the new MS Server 2012 there is no SBS. I have a customer that has over 100 accounts on Office 365 and doesn't want to spend the monthly $ to keep their accounts so they are looking into buying a server to install locally at their office.
If I'm not wrong their only option is to get a Server, install Hyper V and then install two MS 2012 Server and make one of them the PDC and on the other we could install MS Exchange, right?

Any recommendations?

SBS 2011 premium supports how many mailboxes. I thought it only supports 75, right?
