exchange not syncing

The owner of my company has both devices listed in the tags, and last tuesday our VM server deleted the vmdk files.  not sure why, not even VMware support could tell me.  I have since rebuilt an exchange server and have imported most people's .pst's that i converted from their old psts.  the question is

how do i get the email from the iPad and iPhone to sync back up without losing information?
by the way. it was a total data loss. even my backups got corrupted.

I don't believe there is a way to do so using Apple products.  Your best bet is to hopefully find a 3rd party app that would allow you to do so.

yeah, i just found out that even the itunes backup doesn't save emails.  hopefully i can get a database restore on the old emails.  maybe symantec will actually have a tool to recover corrupted databases.  if any knows one, help would be appreciated.

I have done this method to recover the database if you have the logs and edb.

Otherwise if you have the datastore (.edb) I used this 3rd party tool for a client to recover what I could.  Some emails were corrupt but most of it was ok. I used this method when the above method failed.

Its like $500 and can be used as much as you want (tech license).  There are other tools that can be purchased.
