Forwarding email from one exchange to another exchange server

My customer has been put in a position where thier the Franchiser company is making it mandatory to migrate to the Franchiser Exchange server. Meanwhile we already have an Exchange server and currently all of our email is forwarded from the Franchiser to our Exchange server using POP accounts. That is no longer an option but at the same time the Franchiser gives them very limited resources on their Exchange accounts.
The limits are:
2GB per mailbox (the only option is to archive to a local pst file)
No public folders (we make use of these all the time)

I know that in Outlook 2010 it is possible to connect to 2 exchange servers. How could we set it up in Outlook so that all incoming email from the Franchiser Exchange would forward to our Exchange server and our Exchange server would become the default for sending, contacts, calendars and public folders.

You need to create a rule in your franchise mailbox to forward emails to your mailbox or you need to ask them to create contacts for your mailboxes in their environment. Then under franchise mailbox properties, ask them to forward to your contact address and leave no copies on franchise mailbox.

Finally, Configure your exchange server account as primary in outlook and use it.
