Veeam 7 backup and restore

Hi,
Running Veeam 7 backup and restore for my infrastructure VMware 5.1.  Need to know what is the best backup solution for Exchange 2010 VM under Veeam 7.  At the moment I am making simple backups under Veeam 7 for exchange virtual machine on external hard drive .  As there are too many options in Veeam 7 I need to know in case of a disaster what will be the best option to restore my exchange 2010 virtual machine from an external drive?
is there a one click solution under Veeam 7?
Steps will be appreciated.

If you have the option to do a snapshot type backup that would be the BEST for a disaster, However if you are wanting to recover individual items then you will need to do a database backup (if Veeam 7 has that option) It really boils down to what you are wanting from your backup system.

First of all, I would enable Application-Aware Image Processing. This is an ad-hoc mechanism, which allows Veeam to create transactionally consistent backup of a VM running VSS-aware applications (such as Microsoft Exchange) without powering them off. Furthermore, it ensures successful VM recovery, as well as proper recovery of all applications installed on the VM without any data loss and also it notifies applications about them being backed up.

You can also use Veeam Explorer for Microsoft Exchange for item-level restore for Exchange VMs.

Yes, have a look Instant VM Recovery. From the User Guide (p. 73):

With instant VM recovery, you can immediately restore a VM into your production environment by running it directly from the backup file. Instant VM recovery helps improve recovery time objectives (RTO), minimize disruption and downtime of production VMs.
When instant VM recovery is performed, Veeam Backup & Replication uses the Veeam vPower technology to mount a VM image to an ESX(i) host directly from a compressed and deduplicated backup file. Since there is no need to extract the VM from the backup file and copy it to production storage, you can restart a VM from any restore point (incremental or full) in a matter of minutes.

Veeam Backup & Replication creates image-based backups and replicas, meaning it creates backups of the whole VM. Having a backup, you can restore an entire VM, VM disks, application items from this backup - all without usage of any additional tools and without agents inside VMs.

well explained.  I am playing around with the Explorer for Veeam Exchange, for this to work do I need to create the 'application image processing' backup job first? or I can connect the explorer directly with the existing normal/general backup which I had taken in past with Veeam?

Application-aware image processing is the recommended option to use for backup and replication of Exchange Server and other VSS-aware applications. To enable this feature, you should select Enable Application-aware image processing check box in the Backup job settings:

New Backup Job (or edit existing Backup Job) --> Guest Processing tab --> Enable Application-aware image processing

Veeam Explorer for Exchange can work with the existing Exchange VM backups which were taken in the past with Veeam, however I suggest to use this settings for your future backups / replicas.
