I've created an xenserver 6.2 nested inside esxi 5.1. I be able to use xencenter to create vms. Traffic on xencenter is on different vlan from production. Is it safe to build a samba server, and other vms in away that it not affect production enviroment (vmware). Let me know if you need more info.

Sure you can. As long as you don't connect the samba vm to the production network. That would require you to intentionally do so by configuring it's interfaces with production information.
