Thoughts please.
Would an email address with a well-known domain name be a target for SPAM?
eg
company.com@domain.com where company.com is a high profile company.
A client complained that they received SPAM after signing up to a web service and that their privacy was breached.
We are wondering if they received SPAM because the first part of their email address was being scanned/scraped etc.

Most likely the address is spoofed. If there is a link in the email for the address, check the address and most likely it is spoofed. You could also check the header and see where the message is coming from (original MTA).

The client used the company.com@domain.com as the address they signed up with. The SPAM is non specific.

That seems unrelated to everything else in this question. Is it just a simple side comment? Or is it intended to be related to the rest somehow?

Client signed up to a service via a website. Client immediately started to receive SPAM to the address they used to sign up with.
They created the address to sign up using the domain name of the company they were signing up to. (they host their own mail).
They are complaining that the company they signed up to sold their address or have been breached.
This is why they are saying they their privacy has been breached.
I'm trying to advise the client that feels they were breached that the SPAM is random and not as a result of signing up to the other client web service.
Getting a little more complicated than it needs to be.
I have seen brand new accounts on corporate servers receive SPAM the second they are created. I also know if people have 'famous names', they seem to get more SPAM than normal .
