advice on removing exchange 2007 from domain

we are running exchange 2007 and 2010 sp3
i have moved all my mailboxes over to 2010
i have also moved the global address list
what advice or tips can you give me on best practice for removing my exchange 2007 server

would it be a good idea to just disconnect the nic on the 2007 server for a few days
this would show me its safe to remove the server
well, if you follow the above article and also do an audit of the third party applications(like fax...) that maybe use SMTP routing, it should be ok
