Tracking high CPU utilization on Server 2008

I have a server with SBS 2008 installed. There will randomly be peaks of high CPU usage on the server. By the time i login to the server to check which process is pegging the device its already gone.

Whats the best way to track which processes are hanging up a server? I know windows Server 2012 has a nice feature to do this. Would i have to use a 3rd party utility for SBS 2008?

You should use performance monitor and leave it open. You can set how long you want it to record. You can find it in the Administrative Tools. Let me know if this helps.
