get-organizationconfig shows old exchange 2000/2003 server

We removed the exchange 2000 server manually from AD by deleting the server name. Everything continues to run normally for Exchange 2007, but now we want to fix 1 user who appears to be getting postmaster NDR emails.

GET-OrganizationConfig shows legacy information that I believe should be showing the Exchange 2007 configuration.
How do we fix this information, or does it matter?

Which legacy reference are you pointing to ? If First Organization than thats the ORG and not AG so it will remain so always :)
