SBS 2008 / Exchange 2007 to Office 365 / Exchange Online Migration Resources/Documentation

So we're looking at migrating a 50 user SBS 2008 to Exchange Online, does anyone have any good links to documentation and resources for this?  Feel free to provide a step-by-step here as well if you feel like it ;-)

In your situation, I would suggest the Cutover or Staged Migration outlined here:
