Hi,

I believe there are a few different MS Server Essential R2 products.

What are the different versions and what are their key differences?

Nope. There is only one SKU for essentials 2012 R2.

is it just R2 essentials preview then? is there not a standard or datacentre version?

There were preview releases of all editions. Preview was not an edition, it was another word for beta.

There are four editions of 2012 R2. Foundation, essentials, standard, and datacenter. But there is not an "essentials standard" or "essentials datacenter." there is just "essentials." it is its own thing.
