I am deciding between wordpress.org and .com.  I would prefer to have the hosting and admin of .com.  However, I want the ability to embed the stream on one of my own pages.  Basically, I don't want all the template design.  Can I do this with .com?

Not with the basic .com package.  If you are willing to pay enough then you will eventually get the flexibility you want but .com Enterprise is multiple thousands of dollars per month.

It sounds like you want managed WordPress hosting.  I would look into WP Engine.  You get a self-hosted WordPress account so you can install or customize anything you want and they take care of caching, updates, and security for you.  It's a little more expensive than standard shared hosting but worth every penny.
