Provided there is no open snapshot (if there is delete it) rigght click the VM, go to Edit Settings. Select the HDD and increase the size. Once complete log onto the VM. I am not sure what OS your VM is running but if you are not sure how to extend in the OS let me know what it is and I can assist further.

Can this be done when the VM is in prodcution ?

The OS is Windows 2008 R2 Enterprise.
You can do this anytime. Although if it is a large snapshot on a busy LUN it will impact the server performance.
