I have installed a standard centos ... apache, mysql, phpmyadmin, etc. I now need to install the mail server. Is there a standard one that is most used? What about antivirus, spam, etc. Do I need to pay for that - or is there open source?

Hi,

You not need to pay for that it's open source
configure complete mail server in centos with following package & criteria:

Use postfix,dovecot for mail service
Use squirrelmail for web mail  login
Clamav anti-virus for scan mails
spamassassin for block spam mails

Go original site for know deep knowledge (Documentation presentation available on each package site)

PostFix is the default mail handler for RedHat Enterprise Linux (RHEL) 6, which should be reason enough to use it as mail transfer agent in CentOS 6.x (your post doesn't really state a version).

The open source AMaVis (or amavisd) should also be available in the default CentOS repos.
