Anybody familiar with NINTEX workflow 2007 for sharepoint?

If I publish a workflow and I want to back-out of it or un-publish it, how do I do so?  Is it possible?

Yes. It's possible. I havent worked with nintex for a little while, but you can always remove the WF at any time if needed.
Do u have a dev environment?

I am actually working out of my VMworkstation.  I will be starting a project on Thursday and that's one of the questions the client asked.

Nintex Workflows can be removed from lists & libraries the same as sharepoint workflows.

'Settings > List Settings > Workflow Settings > Remove workflows' and also (from memory) it can removed or disabled from within Nintex.

I would recommend if you have not already checked it out, to head to Nintext Connect http://connect.nintex.com/ and check out some of the discussions on the boards.
There is a 2007 product section you can review.
