IaaS Backups

I’m looking to move a client’s IT infrastructure entirely to the cloud (IaaS). It seems this is possible but I have not seen an image type backup that lets me restore the entire server to a point in time.  I want to automate my “snapshot” backups and set the backup schedule.

Someone suggested Amazon EC2 with Rightscale but you have to write scripts. That is not going to work for our situation. Any suggestions?

I've worked with ExternalIT.com a bit and they are the only ones I've come across that I would trust with this sort of task.  They've done what you are attempting and with very good results.
