I have created a Windows 8.1 VHD for dual boot on a Windows 7 host. When booting to the VHD I can see and access other partitions from Windows 7. How can I hide them or disable access to them from Windows 8.1 VHD?

Access the Disk Manager under 8.1 and remove the letters associated to the host's partitions. This hides them.
