Is there anyway in windows to see how much disk space has changed month on month for the previous 12 months (for capacity management), or any other tools you use to monitor available space and storage growth?

Look at TreeSize Professional (Jam Software). Install it and set it up. Perhaps leave it running.

In the TreeSize window is a History Tab that shows you a graph of how much disk space is being used over time.

That would be a good start for you.

I prefer to know today what is chewing up space so I more at that.

Do you define any thresholds on what you will tolerate in terms of used space on business critical systems? I.e. is anything less than 80% free typically frowned upon?

Maintaining 80% seems too much over the long term. I like to see a disk space spool use around 50% after it has been in place for a while. To be sure, you start with lots of free space, but at 30% free space, it is usually time to add space or understand when space might need to be added.
