Cisco AP 1140 Dropping or Slow - Standalone Version

So I'm not new the Cisco community, I am pretty fluent in the Switch & Router world but not the AP world so I am asking for help because the only answer I have found on Google isn't or addressing my issue entirely.
So I have a Cisco 1140 Standalone model at home powered by a Cisco POE Injection Adapter. That is plugged into a Cisco L1 (unmanaged) SG300 Switch (small business) and my router is a Sonicwall TZ210 with no Content Filtering, IPS or GW-AV turned on. My Internet connection is Verizon FiOS and my WWW package is 75Mbps down / 35 Mbps up.
Every weekend we do a video chat with our family from out of town and a lot of video streaming. Every "heavy usage" I do (video stream my Dish Hopper or Skype) the wireless either drops or get's real sluggish and either drops eventually or gets pixelated (not sure if I spelled that correctly).
When I google around, most people saying that it is interference so I ran the diag to check interference on all channels (including my channel) and everyone is my neighborhood is on Channel 6 because there was like 20+ interference on it but my AP is on Channel 3 and it was only showing 1. Everything is Cat6 and gigabit but I still have issues.
The only thing that shows in the Log is some "deassociations" because of a bad packet or something so again I don't know what I am looking for since I'm a switch/router guy and not a AP guy but more than willing to learn - I love my Cisco gear.
