Need Graphic Cards and Monitor Advice

I'm looking for some insight from other gamers who have switched from gaming on multi-monitors to a single one or vice versa. I currently have 3 monitors and each of them has a resolution 1920x1080 and I have 2 GTX570's in Sli. I tried gaming using Nvidia Surround, but my cards can't push the 5760x1980 at a decent frame rate to really play anything.

So, I'm thinking about getting one 27" monitor with a resolution of 2650x1440 or upgrading my graphics cards to something that can handle 5760x1980. I wouldn't even know what cards to get. I do use 3 monitors for productivity as well, but I'd figure I could work around that with the extra resolution I'd be getting with a 27" monitor.

Any reasons you can provide for going one route or another would be appreciated.
