You are talking about changing DNS domain names (restructuring domain names), correct me if I am wrong.

1st - Root domain cannot be changed \ restructured
2nd - Having Exchange 2010 domain restructuring is not possible \ supported

What you can do, setup new forest with parent and child domain, setup new exchange 2010 in new child domain and then do cross forest migration to move exchange mailboxes and so on.
This will also lead to migration of users and computers as well.

My research seem to come out the same, would be nice if someone else has the same conclusions, as The is a Migration project I doe have users or computers move yet so that's not a issue but I cannot see the customer paying for a rebuild..
