Using GMAIL to receive email & respond according to subject

Is there a way for someone to email a specific GMAIL account and once the email is received it is handled by a PHP script or something which responds according...similar to companies like Sprint who say "Text  STATEMENT to #85746 to get your current statement" and then it sends the correct info back.

Example:
Employee emails orderstatus@gmail.com from their phone when they're out with a customer and it has SUBECT: "ORDER#88775" and it queries some SQL DB and emails back with the current expected ship date for the order.

We are using Gmail for business if that is important to know

I do not think you can do this directly from Gmail, but you can auto forward Gmail email to a local mail server, where you can do pretty much anything you want.
