Does the site map have anything to do with which pages are displayed by the search engine?

Is generating one online sufficient?

Probably good idea to read Wikipedia's article on sitemaps https://en.wikipedia.org/wiki/Site_map

Note that it is the page's content that will influence the search engine's decision as to whether the page is to be displayed or not.  Not the sitemap, the search engine uses the sitemap to find and index the pages (and thus determine the value of the content).

Should be.  As long as all of the concerned pages can be found by the tool and a valid site map page is created.
