Installing server 2003 SP2.....

I've taken over 2003 standard server. Its has not got SP2 on it.

I've downloaded the Service pack -

Does the install require a reboot? And is there any known issues to watch out for when installing this Service pack?

The service pack will require reboot after install.

I suggest You  to backup the server first  ( You have taken the server over, and You don't know if everything is ok ) , for example with build in NT Backup Tools or other backup software.

Please read these documents before installing SP2

Thanks, I'll make sure all backups are in place.

This server is a Dell Poweredge 2900 running a 32 bit OS. I take I downloaded the correct version of this SP? As there is one names 'itanium' which refers to the processor I presume?

Yes, it should be (32-bit x86) version.

Itanium version is for IA-64 processor family.
