We have configured a single iOS device to our new UDS server and are testing it.  In Work Connect, Settings, the user can delete their email account, which is set up for them via the UDS.  Is there a setting that would disable the ability to delete the email account from the device by the user?

Not that I am aware of. Like many MDM solutions, this was designed around the BYOD philosophy. Therefore, if the device would happen to be owned by the person, they would have the right to delete the account from the device.
