We currently have an existing Veeam Backup & Replication 6.1 server and we'd like to move to Veeam Backup & Replication 7 Cloud Edition. Should we consider building a new Veeam server to install the new version of Veeam or is it straight forward to upgrade the existing Veam 6.1 server to Cloud Edition 7?

I went ahead and ran the version 7 install on our existing 6.1 server today. I had to run a patch which was included in the installation and reboot the server a couple of times, but it worked fine. I have all the historical info and the test backups I ran today worked without any errors. I even got Veeam Cloud backup working with AWS Glacier. Great product, which keeps impressing me the more i use it.
If anyone can offer some optimisation  suggestions or best practices that they can recommend that would be great.

I'm happy that the upgrade worked fine and caused us no complications.
