How am I able to setup an exchange account on Outlook 2010 desktop client, but sync the Calendar only? I want to remove/hide the email part of this exchange account on this client computer.

With iPhone it is easy. After an account has been created, it gives you the options to select/deselect email, contacts, calendar, tasks e.t.c

But with Outlook it seems more difficult....

I should mention the exchange account is hosted 2010 exchange with Intermedia, if that makes any difference.

As far as I am aware, that isn't possible.
Outlook is primarily an email client, everything else sits on top of that.
