Where can I look to verify that an undelivered message notice (for message too large) was sent back to the sender? I have one sender who says they don't have any kick-back messages, however, in twelve other independent tests, all twelve senders received the undeliverable message.

Unless you had logging enabled on the Receive Connector, you cannot.
However even though your server generates the NDR, there is nothing to say they received it. A lot of mail admins block or disable NDRs as they think they are aiding spammers (they are not) or aid hackers (which they don't) or allow the server to be abused (not if they are setup correctly).

Once back in the office I'll check status of logging. Once I verify it's on (or turn it on) what am I looking for in terms of finding a specific NDR to a specific sender?

If it wasn't turned on then there is nothing you can do about it.
If it has been enabled, you will just need to look through for the sender to see whether there is a delivery error code or not.
