Looking for advice with a new SharePoint Farm

We are looking to setup a new sharepoint farm and need some advice with regards to the architecture or possibly some recommended links that may supply knowledge in this area.
 
Our farm will start with over 800 individual sites that we need to be able to search for assets.  We would also like to have a asset library for images.

What is the best way to structure so that all this material is searchable/reuseable.

My advice to you friend is to hire a professional consultant to assist you.  Internet forums like this one can be helpful, but if you are really new to SharePoint and have a significant farm planned (like you appear to) I would never advise relying upon the internet alone.

That being said, Technet is the gold source of information, for the most part.  You need to be familiar with this material.

You need to get a grasp on the difference between Web Apps, Site Collections (sites), and Sub Sites (webs).  Web Apps are essentially sites in IIS and they are always attached to one or more content databases.  Web Apps are made up of Site Collections, which are logical collections of Sub Sites.  A Site Collection lives in a content database and therefore all subsites under it live in the same database.

By default you will see search results from you current subsite and below.  Meaning if you search from the top level site in a site collection you will see results from all subsites within the site collection.  You will not see results from other site collections, by default.

Now, you overcome that by implementing a Search Center (which is a separate site), which can return results from across the farm.
