SBS 2008 Delete email from ALL mailbox's

We have an SBS 2008 server.  We recently migrated our email to google.  We still might use the exchange for a thing or two (scanners that send scans as attachments, etc) SO I don't want to delete the entire exchange DB, but I would like to delete all mail from the mailbox's and do whatever I need to do to get the DB sizes down.   I'd prefer to leave the mailbox's there... but if its a lot easier to just delete the mail box's I might be open to that.

What is the easiest way to do this?

Stop the information store, dismount the database in ESM, rename the folder where the database lives and mount the store again.
This will cleanup your database while keeping all mailboxes.

It seems that now the scanner is having problems sending email... could be a conicidence I supposed... but what can I check to make sure that the exchange server SHOULD still be processing mail just fine?  Thanks!
