How do you add a calendar date picker for a cell in Excel? I would like to see a pop up of the calendar for the user to pick a date from.

You must add a calendar control and bind it to the cell. Here you will find a tutorial.

Alternatively you can use the add-in created by Ron de Bruin and based on John Walkenbach's work, you can find it here.
