I have a short window to install the Exchnage SP2 Rollup 8 on 6 Exchange 2010 Servers.

If  I only  install  it on 4 of the  6 Servers  and wait two weeks  to finsh the install on the 2 remaining servers will that cause an issue?

The remaining  two servers have the Mailbox Roles (only) on them.  Would  this be a problem?

As long as all CAS role holders are updated before any mailbox servers, you should be fine.
Any reason you are installing an update that is so old? Exchange 2010 SP3 rollup 4 is the latest. SP2 goes end of life soon.

Simon.
