App-V application operating system incompatibility possibilities

Our office is considering App-V implementation during upgrading from xp to 7.

According to microsoft website
Http://technet.microsoft.com/en-us/library/gg548576.aspx

>you have considered App-V as an option for delivering the incompatible applications and have concluded that even after you implement App-V, you still have application operating system compatibility issues that you must address.

I thought App-V would be able to resolve all xp applications operating system compatibility issue on windows7, however this description indicates there seems to be some exceptions.
Do we might encounter still operating system incompatibility issue even though App-V is implemented ?

I would like to know what kind of reason could cause these exceptions ?

Regards

Thank you for your explanation. let me ask one more question, is it possible to run application on windows 7 that was captured on windows xp technically under app-v ?
Yes in fact that is the primary scenario
1.  Doesn't Microsoft recommend that sequencer os should be same with client os ?
2.   What happens if capturing 64bit application on windows 7 64 bit and run that on windows 7 32 bit client under app-v ?
