I have setup a 30 day day retention policy to Delete Inbox and All Other folders (which I want all user created Subfolders of the Inbox, Sent Items, Deleted Items, Drafts, Junk E-mail) to be a part of this policy.

I do NOT want to delete any contacts, notes, tasks, or calendar entries.

How can I achieve this?

Change the retention policy to only include email.

Get-RetentionPolicy -Identity "Policyname" | fl RetentionPolicyTagLinks

Look at what is listed for the PolicyTagLinks from there you can add and remove.

I did that but now it's deleting the mail items in the archive mailbox older than 30 days. I don't want any deletion to be done in the archive mailbox

The retention being applied to the Archive mailbox is by design unfortunately, and there is no way around it.
