Incoming email display name

We have an issue where Outlook or Exchange is changing the display name of incoming emails to the display name in the exchange account.  We use the same inbox to get replies to marketing emails sent from a third party email system.  We change the display name of the email for different emails in the third party system, but when they hit any account on our system it changes the display name to the display name associated with the smtp address of that email.

Scenario is: we send a marketing email from a third party email system.  We send an email from joe@test.com with Display name of "Joe Test - Educator Director".  On our exchange server we have an account named "Joe" with an smtp of joe@test.com.  When the email comes into our system and opened on anyone's Outlook it will show the display name of "Joe" instead of "Joe Test - Educator Director."

We're running Outlook 2010 and Exchange 2007.

This is expected behaviour. The Email address is the Key and it it is ONLY this that defines where an email came from.
Do NOT send from an email address that is used for a different purpose.

That is what I've been telling my users, but they claim that this behavior did not happen in the past.  They actually had emails showing the display name was kept intact and not altered.
