Users are able to install applications using the SCCM "Application Catalog" icon, do you know a registry setting that I can change in order to hide the icon?

First of all you can deny Users to install Applications:
http://technet.microsoft.com/en-us/library/gg682067.aspx#BKMK_ComputerAgentDeviceSettings
So you can create a Special Client Settings policy for your hosted Servers.
Also you can just not configure the Appication Catalog Website on this policy for the hosted Servers
