You can use Powershell's New-EventLog command to create a custom event log.

When I do that it asks for a 'source'.  What exactly is that?

The source is the name application program or library DLL  that is generating the custom events.
So if you have written your own application that creates events, you specify the name of the application, also specify the MessageResourcefile option.
e.g.
C:\PS>new-eventlog -source TestApp -logname TestLog -MessageResourceFile C:\Test\TestApp.dll
