First off, the email audit feature does not let you recover emails that have been deleted an put into trash, it lets you setup a monitoring of emails that are sent/received in real time.

The only way to ensure emails are preserved, even if deleted, is to run Google Apps Vault or a backup/recovery services like Backupify.  Vault is designed to create an archive for e-discovery purposes (subpoena response, FOIA requests, policy and legal investigations).  It can recall individual messages, but they will not be restored ... they arrive in the inbox.

Backupify (and others) provide a more traditional backup/restore service, through which you can restore deleted or damaged data ... email, calendar, contacts, Docs, Drive, and Sites

Your next step is to create a support request to Google ASAP.  You deleted emails may be on the system for up to 7 days, but there are no guarantees.  Google is under no obligation to recovery them for you, so your ticket is best to request help rather than demand service.

Going forward, consider one of the protection services.
