We use Symantec now to do backups and are switching to Veeam. Right now we have Full backup job and then run an incremental job that shrinks the SQL databases.
Is there an option in Veeam 7 to perform this same step?

Yes, veeam supports truncation of SQL transaction logs

To use it, on backup job, select " application-aware image processing" ->
"Advance", you will see the options for transaction logs

Please refer to this KB

http://helpcenter.veeam.com/backup/70/hyperv/transaction_truncation.html

Hope this helps.
